Smoked Salmon on Brioche with Avocado Relish & Fresh Coriander
paired with our Russian River Valley Pinot Noir


8 oz. smoked salmon
1 loaf of brioche, crusts cut and sliced 1/4” thick
1 avocado, peeled and diced
1 lime, juiced
1 roma tomato, seeded and diced
1 bunch cilantro, half the leaves picked, half minced
salt and pepper to taste

Cut the brioche slices into bite-sized pieces and place on a sheet tray. Bake in a 400 degree oven for 6-8 minutes or until golden brown. In a large bowl, combine the avocado, lime juice, tomato, minced cilantro, and season with salt and pepper.

To assemble, begin with the brioche and add a piece of the smoked salmon. Top with a spoonful of the avocado relish and a picked cilantro leaf.
